GOOD EATS: No Scuffle Truffles
Truth is I am a lazy cook. The less I have to do the better. That is why I always assumed truffles would never be something I would make. Ever. Especially from scratch. BUT Laura proved me wrong by inviting me over to her house one day. We made homemade truffles and I couldn't’ believe how quick it was to make this delectable treat. PREP TIME 10 min COOK TIME 60 MIN SERVES 24
INGREDIENTS
1 cup heavy cream
2 tbl unsalted butter
2 tbl granulated sugar
1 tbl espresso powder
1 tsp salt
12 oz premium bittersweet chocolate chips 60% cacao
Chopped toasted walnuts, coconut, or cocoa powder
DIRECTIONS
Heat cream, butter, sugar, espresso powder and salt until dissolved.
Bring to a boil.
Remove from heat and pour over chips. Cover and let sit for 5 min while chips melt. Whisk until smooth and shiny.
Cool until the mixture can be shaped. Using either a tablespoon or a small scoop, shape into balls and set aside until firm.
Dust with cocoa powder or roll in either chopped nuts or coconut. Set for 1 hour. Serve at room temperature.
