GOOD EATS: Cracked Potatoes

Nothing beats a warm, satisfying side dish on a dark and dismal winter day. These potatoes will make a great companion to almost any main event. Enjoy!

INGREDIENTS

12 small gold and red potatoes

1/2 cup olive oil

2 sprigs fresh thyme

1/2 tbsp chopped fresh thyme leaves

1 clove garlic, sliced

Coarse salt and freshly cracked black pepper

DIRECTIONS

  1. Smack the potatoes once with a rolling pin or pan until skin splits.

  2. In a heavy saucepan over low heat add oil, potatoes and thyme sprigs. Season with salt and pepper. Cook covered, shaking the pan every 5 min or so, until browned. About 10 to 12 min. Turn potatoes. Cover and repeat to brown other side. 5 to 8 min.

  3. Remove lid to allow condensation to evaporate. About 2-3 min.

  4. Remove thyme sprigs, add garlic and chopped thyme. Cook to caramelize garlic. About 2 min.

  5. Serve hot.
